Scandinavian Pastry Bars Ingredients: 3/4 Cup salted butter, softened 3/4 Cup confectioners' sugar 1 1/2 Cups all-purpose flour 3/4 Cup seedless raspberry jam 3 egg whites 6 Tbs. sugar 1/2 Cup shredded coconut 1 Cup sliced almonds, divided Directions: 1. In a large bowl, cream together butter and sugar until light and fluffy. 2. Gradually add flour; mix well. 3. Press dough into the bottom of a 13"x9" greased baking pan. 4. Bake at 350F for 18-20 minutes or until lightly browned. 5. Spread jam over crust. 6. In a large bowl, beat egg whites until soft peaks form. 7. Gradually beat in sugar, one tablespoon at a time, until stiff peaks form. 8. Fold in coconut and a half cup of almonds. 9. Spread egg white mixture over jam. 10. Sprinkle with remaining almonds. 11.
